In Spain they make a summer soup with figs and tomatoes – a flavour combination I like. Here I have used the sweet-savoury idea of that dish in a rather simple spiced chicken salad.
Roasted Fish with Tomatoes, Zucchini, Pancetta & Green Olives
Here the fish is simply rubbed with oil and flavourings, roasted in a hot oven then served with a quickly made pan sauce of barely cooked fresh tomatoes.
